These are based on a Swedish recipe called “St Lucia Muffins” from the page dagensmuffin.se. I can no longer find the recipe online so I decided to share it. And in half an hour you could have awesome muffins! 1 dl = 100 ml
- 4 dl wheat flour
- 2 dl sugar
- 1 teaspoon salt
- 25 g melted butter
- 1½ dl milk
- 1-2 eggs
- 1½ dl raisins
- ½ apple
- ½ dl hazelnuts (or walnuts)
- 1 teaspoon cinnamon
- licorice strings for legs
- Mix flour, sugar, salt and baking powder.
- Add the melted butter.
- Whip together milk and eggs.
- Stir in the flour, eggs and raisins. Grade the apples, chop the nuts and add the sugar and cinnamon. Mix it all into the mix.
- Pour the mix into the muffin forms (it’s always a good idea to butter them). I find that using silicon forms works much better than paper.
- Bake the muffins for about 20 minutes at 220-225 C
- Let them cool and stick in the cool legs!
